Start with your climate
This decides more than anything else. In the South, coastal California or anywhere winter means 45 to 60°F, an A-2 or G-1 will see far more use than a shearling coat. In the Midwest, the Northeast or the mountain states, a B-3 earns its place from December to March. If you want one jacket for a variable climate, the G-1 is the middle ground: light body, warm collar. Leather
Goatskin is the traditional G-1 hide and a common A-2 hide: light, strong and grainy. Cowhide is heavier and takes longer to break in, but it resists abrasion well and holds its shape. Sheepskin, used on B-3 jackets, is softer and more supple, and when it is finished as shearling the wool stays attached to the skin to form the lining. If you like a worn-in look from day one, a distressed leather jacket finish removes the worry about the first few marks.
Fit
An A-2 and a G-1 should be trim. The knit waistband sits at your belt line, not over your hips, and the shoulder seam meets the edge of your shoulder. Sleeves end at the wrist bone with your arms relaxed.
